Instructions
Preheat your oven to 400°F (200°C) to ensure it's hot enough to cook the chicken evenly.
Generously season both sides of the chicken breasts with salt and freshly ground black pepper, ensuring a flavorful crust.
In a large, oven-safe skillet, heat the extra-virgin olive oil over medium-high heat until shimmering. Once ready, carefully add the seasoned chicken breasts. Sear each side for about 4-5 minutes, or until they achieve a nice golden-brown color. Once seared, remove the skillet from the heat.
In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, and dried oregano until well combined. Pour this flavorful mixture over the browned chicken breasts in the skillet, ensuring they're evenly coated.
Sprinkle the halved cherry tomatoes, drained mozzarella balls, and torn fresh basil leaves generously over the chicken, creating a vibrant topping.
Carefully transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is fully cooked through (the internal temperature should reach 165°F or 74°C).
Once done, carefully remove the skillet from the oven and let the chicken rest for 5 minutes. This allows the juices to redistribute and the flavors to meld beautifully.
