Instructions
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until evenly combined. Set this mixture aside for later use.
In a large mixing bowl, add the softened butter along with the packed brown sugar and granulated sugar. Using an electric mixer, cream these ingredients together on medium speed until the mixture is light and fluffy, about 2 to 3 minutes.
Pour in the vanilla extract and mix until fully blended into the buttery mixture.
Gradually add the flour mixture to the creamed butter and sugars. Using a spatula or the mixer on low speed, mix until just combined. If the dough appears too dry, incorporate milk one tablespoon at a time until you achieve a soft and moldable consistency.
Carefully fold the mini chocolate chips into the dough, ensuring they are evenly distributed throughout the mixture.

In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil if using. Microwave in 30-second intervals, stirring well between each, until the chocolate is completely melted and smooth.
Using a fork, dip each chilled cookie dough ball into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip back into the bowl before placing the truffles back onto the lined baking sheet.
Return the coated truffles to the refrigerator for an additional 15-20 minutes until the chocolate coating has set firm.
