Instructions
In a large mixing bowl, combine the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Whisk together until the ingredients are evenly mixed.
In a separate bowl, whisk together the almond milk, vanilla extract, maple syrup, and Greek yogurt (if using) until the mixture is smooth and well-blended.
Pour the wet ingredients into the bowl with the dry ingredients. Mix well to ensure that all the oats are covered and evenly moistened. If you choose to include them, gently fold in the raisins or chopped pecans to add texture and flavor.
Carefully transfer the oat mixture into a jar or a storage container with a tight-fitting lid. Seal it securely to prevent any spills.
Place the container in the refrigerator and let it chill overnight, or for at least 4 hours, allowing the oats to absorb the liquid and soften.
In the morning, remove the oats from the refrigerator and give the mixture a good stir. If the texture is too thick for your liking, add a splash of almond milk until you reach your desired creaminess.
To serve, top your overnight oats with an extra sprinkle of cinnamon, a drizzle of maple syrup, and a handful of nuts or additional fruit, if desired, for added flavor and visual appeal.
Notes
For a creamier texture, add Greek yogurt. Customize with your favorite nuts or fruits.
