Begin by preheating your oven to 350°F (175°C). While the oven is heating, take an 8x8 inch baking pan and line it with parchment paper, allowing some overhanging edges to facilitate easy removal of the bars later.
In a large mixing bowl, combine the rolled oats, almond butter, and your choice of honey or maple syrup. Use a spatula or wooden spoon to thoroughly mix the ingredients until they are well combined and form a cohesive mixture.
Next, add the chopped dried cranberries, almond slivers, chia seeds, vanilla extract, and a pinch of salt to the oat mixture. Stir well to ensure that all ingredients are evenly distributed throughout the mixture.
Pour the mixture into the lined baking pan. Using the back of a spatula, firmly press down the mixture to create a compact and even layer across the bottom of the pan.
Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges of the mixture turn a lovely golden brown color.
Once baked to perfection, remove the pan from the oven and allow the bars to cool in the pan for about 10 minutes. After this initial cooling, carefully transfer them to a wire rack to cool completely.
When the bars are fully cooled, utilize the parchment paper overhang to lift them out of the pan. Cut the cooled mixture into squares or bars of your desired size.
To keep your energy bars fresh, store them in an airtight container in the refrigerator where they’ll last for up to 2 weeks.

For a beautiful display, arrange the bars on a platter and garnish with a sprinkle of chia seeds and a few whole almonds.
