Instructions
Begin by preheating your oven to 200°C (400°F) to ensure it's hot enough for roasting.
In a large mixing bowl, combine the cleaned button mushrooms with the olive oil, minced garlic, fresh thyme, fresh rosemary, smoked paprika, and a generous sprinkle of salt and pepper.
Use your hands or a spoon to toss the mushrooms thoroughly in the mixture, ensuring they are well coated with the aromatic herbs and oil.
Line a baking sheet with parchment paper for easy cleanup, and spread the coated mushrooms in a single layer across the sheet. Make sure they aren’t overcrowded to allow for even roasting.
Place the baking sheet in the preheated oven and roast the mushrooms for about 20-25 minutes. Stir them halfway through to promote even browning until they are beautifully golden and tender.
Once they are cooked, remove the baking sheet from the oven, and allow the mushrooms to cool for a minute to let the flavors settle.
Carefully transfer the roasted mushrooms to a serving dish, and generously sprinkle with freshly chopped parsley for a burst of color and freshness.
