Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a large mixing bowl, combine the cauliflower florets with the olive oil, minced garlic, smoked paprika, sea salt, and black pepper. Use your hands or a spatula to toss the florets until each piece is thoroughly coated with the oil and spices.
Evenly spread the seasoned cauliflower florets onto the prepared baking sheet, ensuring they are arranged in a single layer for optimal roasting.
Place the baking sheet in the preheated oven and roast the cauliflower for about 20 minutes, or until the florets are tender and beginning to develop a golden-brown color.
Once roasted, carefully remove the baking sheet from the oven and sprinkle the freshly grated Parmesan cheese generously over the cauliflower.
Return the baking sheet to the oven and roast for an additional 5-7 minutes, or until the cheese is fully melted and slightly bubbly, creating a delightful cheesy crust on top.
As soon as they are done, take the baking sheet out of the oven and allow the bites to cool for just a minute. Before serving, garnish with the finely chopped fresh parsley for a burst of color and flavor.
Notes
Serve warm on a rustic wooden platter with a drizzle of olive oil.
