Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the maple syrup, melted coconut oil, ground cinnamon, salt, and vanilla extract, whisking until smooth.
Add the raw almonds to the bowl and stir gently to coat each almond with the mixture.
Spread the coated almonds in a single layer on the prepared baking sheet.
Roast the almonds in the preheated oven for 12-15 minutes, stirring halfway through, until golden brown and fragrant.
Remove from the oven and let the almonds cool on the baking sheet to crisp up.
Once cooled, consider stirring in the dried cranberries or raisins for added sweetness and texture.
