Instructions
Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
In a spacious mixing bowl, add the diced sweet potatoes. Pour in the olive oil and maple syrup. Sprinkle the cinnamon, nutmeg, and a generous pinch of salt over the top. Using a spatula or your hands, toss the sweet potatoes until every piece is thoroughly coated in the mixture.
Transfer the sweet potato mixture onto the prepared baking sheet, spreading it out into a single layer for even roasting.
Place the baking sheet in the preheated oven and roast the sweet potatoes for 25-30 minutes, or until they are fork-tender and have developed a beautiful caramelized color. Be sure to stir the mixture halfway through cooking to ensure even browning.
In the final 10 minutes of roasting, sprinkle the roughly chopped pecans over the sweet potatoes. This will allow them to toast lightly, enhancing their nutty flavor.
Once the sweet potatoes are fully cooked, remove the baking sheet from the oven. Allow the dish to cool for a couple of minutes. Just before serving, garnish with the finely chopped parsley for a fresh, vibrant touch.
