In a medium-sized mixing bowl, pour in the cold brew coffee and add the unsweetened cocoa powder. Using a whisk, mix them together until you achieve a smooth and velvety consistency, ensuring there are no lumps of cocoa.
Once combined, introduce the milk (choose dairy or your favorite non-dairy alternative), followed by the maple syrup (or sweetened condensed milk), vanilla extract, and sea salt. Continue whisking until all the ingredients are smoothly incorporated and the mixture is uniform.
It’s time to taste! Sample your mocha mixture and, if you desire a sweeter flavor, gradually add more maple syrup until it reaches your preferred sweetness level.
Carefully pour the mocha mixture into your popsicle molds, taking care to leave a small gap at the top of each mold to allow for the popsicles to expand as they freeze.
For a delightful twist, sprinkle a few chocolate chips or crushed espresso beans into each mold, creating an enticing texture throughout the popsicles.
Insert popsicle sticks into each mold, ensuring they are secure, and then place the molds in the freezer. Allow them to freeze for at least 6 hours, or until they are completely solid.
When you're ready to enjoy your popsicles, gently run warm water over the outside of the molds for a few seconds or twist them gently to help release the popsicles from the molds.
