In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of sea salt. Stir well to ensure the dry ingredients are evenly mixed.
In a separate bowl, add the natural peanut butter, honey (or maple syrup), and vanilla extract. Use a spatula or whisk to blend these ingredients until the mixture is smooth and creamy.
Gradually pour the peanut butter mixture into the bowl with the dry ingredients. Stir with a wooden spoon or your hands until everything is well combined and a sticky dough forms.
Gently fold in the dark chocolate chips, making sure they are evenly distributed throughout the mixture to ensure a chocolatey bite in every ball.
Once fully mixed, cover the bowl with plastic wrap or a lid and refrigerate the mixture for about 30 minutes. This will help it firm up and make it easier to roll into balls.
After chilling, remove the mixture from the fridge. Using a tablespoon or a small cookie scoop, scoop out portions of the mixture and roll it into a ball between your palms. Aim for about 1-inch round balls.
Place the rolled energy balls on a parchment-lined baking sheet, ensuring they have a little space between them.
Once all the mixture has been rolled, store the energy balls in an airtight container. Keep them in the refrigerator for up to a week, or freeze them for longer storage – they make a great grab-and-go snack!
