Introduce the finely chopped green onions, diced bell pepper, minced garlic, and grated ginger to the skillet. Sauté together for another 2-3 minutes, ensuring the vegetables soften but still retain some crunch.
In a small mixing bowl, whisk the soy sauce, peanut butter, honey, lime juice, and red pepper flakes (if using) until a smooth sauce forms. This will be the flavorful coating for your chicken.
Pour the sauce over the cooked chicken and vegetables in the skillet. Stir thoroughly to ensure every piece is evenly coated. Allow to cook for an additional 2-3 minutes so the flavors can blend harmoniously.
Once done, remove the skillet from heat and let the mixture cool for a couple of minutes.
To assemble, take a lettuce leaf and spoon a generous amount of the peanut chicken mixture into its center. Garnish with a sprinkle of chopped peanuts and fresh cilantro before serving.
