Next, incorporate the fresh mint leaves, freshly squeezed lime juice, agave syrup (or honey), and a pinch of salt into the blender. Blend the mixture again until all the ingredients are blended together smoothly and thoroughly.
After blending, taste the mixture to assess the sweetness. If you’d like a sweeter sorbet, add more agave syrup or honey, then blend briefly again to combine.
Pour the watermelon-mint mixture into a shallow dish or silicone mold for freezing. Ensure it’s evenly spread out, then cover the dish tightly with plastic wrap or a lid to prevent freezer burn.
Transfer the covered dish to the freezer. Allow it to freeze for approximately 4 to 6 hours, or until the sorbet is completely firm to the touch.
When ready to serve, take the sorbet out of the freezer and let it sit at room temperature for about 5 to 10 minutes to soften slightly, which will make scooping easier.
