Instructions
Begin by preheating your oven to 400°F (200°C) to ensure it's at the right temperature for roasting.
Take the drained chickpeas and spread them out on a clean kitchen towel or a layer of paper towels. Gently pat them dry to absorb any residual moisture.
In a medium mixing bowl, combine the dried chickpeas with the extra virgin olive oil, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, and a generous sprinkle of sea salt. Toss and mix well.
Line a baking sheet with parchment paper and spread the seasoned chickpeas out in a single layer.
Place the baking sheet in the preheated oven and roast the chickpeas for about 25-30 minutes, shaking the pan halfway through.
Once roasted, carefully remove the baking sheet from the oven and allow the chickpeas to cool for a few minutes.
Garnish the warm chickpeas with a sprinkle of finely chopped fresh parsley just before serving.
