Begin by placing the hulled strawberries and sliced bananas into a blender.
Add in the Greek yogurt, honey (or maple syrup), fresh lemon juice, and a pinch of salt.
Blend the ingredients on high speed until the mixture is smooth and creamy, pausing to scrape down the sides of the blender as necessary ensuring all ingredients are well incorporated.
Taste the blended mixture and if it needs additional sweetness, gradually add more honey or syrup until desired flavor is achieved.
Carefully pour the blended fruit mixture into popsicle molds, making sure to leave a small gap at the top of each mold to allow for expansion during the freezing process.
Gently insert popsicle sticks into each mold. Lightly tap the molds on the countertop to release any trapped air bubbles for a smoother texture.
Cover the molds with a lid or plastic wrap to prevent ice crystals from forming and place them in the freezer. Allow the popsicles to freeze for a minimum of 4-6 hours, or until they are completely solid.
When you're ready to enjoy the popsicles, run warm water over the outside of the molds for a few seconds or gently twist and wiggle the popsicle sticks to help release the treats.
