Next, add the pure vanilla extract and the sour cream to the mixture. Beat on medium speed until everything is well combined, fluffy, and creamy.
Carefully fold in the finely chopped fresh strawberries and the freshly squeezed lemon juice using a spatula. Mix gently to avoid overmixing; you want to retain the delightful texture of the strawberries in the dip.
Spoon the strawberry cheesecake dip into a decorative serving bowl. Cover with plastic wrap and place it in the refrigerator for at least 30 minutes. This chilling step allows the flavors to intermingle beautifully.
