Begin by placing the sliced strawberries and granulated sugar into a blender. Blend on high speed until the mixture reaches a smooth consistency, ensuring the strawberries are well pureed. Once blended, set this strawberry mixture aside.
In a large mixing bowl, pour in the freshly squeezed lemon juice, add the cold water, lemon zest, and a pinch of salt. Use a whisk to stir the mixture thoroughly until all the ingredients are well combined.
Incorporate half of the strawberry puree into the lemonade mixture. Stir gently until the two mixtures are evenly combined, creating a delightful strawberry lemonade base.
Carefully pour the blended lemonade-strawberry mixture into popsicle molds, filling each mold approximately three-quarters full to allow for expansion when freezing.
With the remaining strawberry puree, carefully layer it into each mold. Using a skewer or a toothpick, gently swirl the puree into the lemonade mixture to create a beautiful marbled effect.
Insert popsicle sticks into the molds, ensuring they are centered and upright. Place the molds in the freezer and allow to freeze for at least 6 hours, or until they are completely solid.
To release the popsicles from their molds, run warm water over the outside of the mold for a few seconds, then gently pull the popsicles out, taking care not to break them.
Notes
Arrange the popsicles on a vibrant platter and garnish with fresh strawberry halves and lemon slices.
