Instructions
Start by preheating your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a medium-sized mixing bowl, whisk together the all-purpose flour, garlic powder, salt, and black pepper. Gradually stir in the water until a smooth, lump-free batter forms.
Take each cauliflower floret and dip it into the batter, making sure it is evenly coated on all sides. Arrange the battered florets on the prepared baking sheet in a single layer, ensuring they are not overcrowded for optimal crispiness.
Bake the cauliflower bites in the oven for 20-25 minutes, flipping them halfway through to ensure even browning, until they are golden and crispy.
While the cauliflower is baking, prepare the sauce. In a small saucepan over medium heat, combine the sweet chili sauce, soy sauce, minced garlic, and sesame oil. Stir the mixture continuously until it warms through and all ingredients are well-combined.
Once the cauliflower bites are done baking, remove them from the oven and toss them in the hot chili garlic sauce until they are fully coated.
Place the coated cauliflower bites back on the baking sheet and return them to the oven for an additional 5-7 minutes. This allows the sauce to caramelize slightly and adhere better to the bites.
After baking, remove the cauliflower bites from the oven and let them cool for a couple of minutes to enhance their flavor before serving.
