Instructions
In a small mixing bowl, carefully whisk together the sweet chili sauce, soy sauce, fresh lime juice, sesame oil, minced garlic, grated ginger, and red pepper flakes (if you prefer extra heat). Mix until all ingredients are well blended into a smooth sauce.
Place the salmon fillets into a shallow dish or a resealable plastic bag. Pour half of the prepared sweet chili mixture over the salmon, ensuring each fillet is well coated. Cover and refrigerate marinating the salmon for at least 30 minutes—up to 2 hours for a more pronounced flavor. Keep the remaining mixture for glazing.
Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with parchment paper to facilitate easy cleanup.
After marinating, gently remove the salmon from the marinade and pat dry with paper towels. Season the fillets with salt and pepper on both sides.
Arrange the salmon on the grill or the lined baking sheet. Cook for about 12-15 minutes, or until the salmon reaches a tender state and flakes easily with a fork. In the last 5 minutes of cooking, brush the reserved sweet chili mixture over the salmon to create a beautifully glossy finish.
Once cooked to perfection, take the salmon off the heat and allow it to rest for a couple of minutes to enhance flavor.
Just before serving, garnish the salmon with a sprinkle of sesame seeds and a handful of fresh cilantro leaves for a vibrant presentation.
