Begin by rinsing the rice thoroughly under cold running water. Continue rinsing until the water runs clear, which helps remove excess starch. After rinsing, drain the rice well to eliminate any remaining water.
In a medium-sized saucepan, combine the rinsed rice and vegetable broth (or water). Place the saucepan over high heat and bring the mixture to a rolling boil.
Once the liquid reaches a boil, reduce the heat to low. Cover the saucepan with a lid and allow the rice to simmer gently for approximately 15 minutes. The rice should be tender, and all the broth should be absorbed.
After the simmering time is up, remove the saucepan from heat. Keep it covered and let the rice sit for an additional 5 minutes to allow it to steam.
Once the resting period is complete, carefully fluff the rice with a fork to separate the grains. Drizzle the olive oil evenly over the fluffy rice.
Next, add the freshly squeezed lime juice, lime zest, garlic powder, ground cumin, and a pinch of salt. Stir everything together carefully to ensure even distribution of flavors.
Gently fold in the finely chopped cilantro, making sure it is evenly incorporated throughout the rice.
Before serving, taste the rice and adjust the seasoning by adding more salt or lime juice according to your preference.
